Crockpot Salmon Fillets

This is totally taken/adapted from my favorite blog, (besides this one of course!) the "crockpot lady": www.crockpot365.blogspot.com. These are my pictures, though, and just changed a couple of things, but really not much. I used a lemon instead of a lime (even though I'd much rather have preferred lime, just didn't have any) and added thyme to the mix as well. Otherwise, same recipe. We had it with carrot and broccoli quinoa with garlic salt and pepper, and some clementine slices. Kinda all the same color, now that I look at it, but so it goes. Kids gobbled it up, so that's all that matters. I ended up liking the quinoa and salmon together in one bite, actually. Nice mix of flavors. Oh, and squeezed more lemon slices over the whole plate, both fish and quinoa. So, that's it. Anyway, give it a whirl! You don't really get your crockpot dirty either, 'cause you're just steaming it in a homemade tin foil package, no water in the pot or anything.


Crockpot Lemon or Lime Butter Salmon

What you need:
aluminum foil
2 salmon fillets
1 T. butter, melted
1/2 T. lemon or lime juice, or both
1/4 tsp. thyme
1/8 tsp. pepper
1/2 tsp. dried minced parsley
2 cloves minced garlic

How you make it:

Spread foil onto the countertop, and put salmon directly in the middle. Melt butter then stir in lemon/lime juice, thyme, pepper, garlic and parsley. Brush mixture all over fish. Fold foil over and crimp sides to make a packet. Put the packet into the bottom of an empty crockpot. Cover and cook on high for 1.5 to 2 hours. It is finished when it flakes easily with a fork.

Regarding the quinoa, if you have questions about making it or what the heck it is, leave a comment and I can clarify anything. For this one, I just put in the raw diced veggies into the pot when the quinoa was cooking and seasoned it with garlic salt and pepper.

  2. They do have them there! They are actually my favorite. Really buttery, moist flavor. They're in the frozen section. But crazy expensive these days. :(
    I got a bulk order over the summer of some other salmon fillets from a discount group thingy. They're not as yummy as Kirkland's brand. Kinda bland and dry, which is why I used this butter, steaming version instead of grilling. And I have a lot so I have to use them up.

  3. I bought some. SO pricey, but I think worth it because Conrad has felt he's been off the wagon of eating healthy and wants to get back on. He's kept his 50 lbs off for a year now! (Thanks for the price warning, it was easier to decide to go ahead and buy it because I wasn't completely shocked.)

  4. You'll LOVE them. Totally worth the splurge. And way-to-go Conrad! That's something not a lot of people are able to do. I'm sure it's easier to keep off as time goes by and you are used to a healthy lifestyle.

  5. I would never have considered cooking salmon in a crockpot, but if you vouch for it ... OK. Maybe I'll "let" you make it for me the next time "you" invite me over for dinner.

  7. The box or container has the directions, but it's completely the same cooking method as rice. You can use a rice cooker for it if that's what you use. I don't though. And you're supposed to rinse it before you cook it, for some reason.

  8. Also, I should clarify that because I think rice and quinoa turn out the best, doing the following:
    1 part rice or quinoa to 2 parts water.
    Add pinch of salt. Sometimes a little pat of butter too! ;)
    Bring to boil.
    Cover and simmer on very low heat for 14 minutes.
    Remove from heat, keeping covered for 11 minutes.
    Remove lid and fluff with a fork.
    It may seem weird that it's 14 and 11 minutes and not 15 and 10. But that's just how I've always done it. And my mom's old-school cookbook said so when I was little and learned it that way. :)
    Oh, and like I said in the post, for this one, I just dumped in the raw, diced carrots and broccoli into the pot before it started cooking. Hope that helps!!

  9. Great blog idea! The pictures are making me SO hungry right now, especially this salmon and quinoa one (mmmmmm heaven on a dish). Kirtland brand salmon is our favorite too... well, at least me and the kids. Greg is not a big fan of salmon but I try to wear him down from time to time. Hopefully this recipe will make him a fan... time to dust off the crock pot :)

  10. Thanks Mandee (Congrats on baby Oliver!! He's just a doll baby! SO cute!) Dade doesn't love salmon either. I keep trying as well. Those husbands....
